Double the Chocolate

So in aid of my chocolate cravings, I made double chocolate chip cookies. Yes, that’s double the chocolate! These are quite rich but a guaranteed favourite for you chocolate lovers!

Here is the recipe:

Double Chocolate Chip Cookies

Makes 12-14 cookies

Ingredients: 

  • 64g packed brown sugar
  • 32g butter or margarine, softened
  • 1/2 tsp vanilla
  • 1 egg white
  • 64g plain flour
  • 3 tbsp unsweetened baking cocoa
  • 1/2 tsp baking soda
  • Dash salt
  •  300g semisweet chocolate chips

Instructions:

  1. Heat oven to 190 C/375°F. In a large bowl, beat the brown sugar and butter with an electric mixer on medium speed until light and fluffy, or mix with a spoon. Beat in the vanilla and egg white.
  2. Stir in the flour, cocoa, baking soda and salt. Then stir in the chocolate chips. Onto ungreased cookie sheet, drop dough by teaspoonfuls about 2 inches apart.
  3. Bake 8 to 9 minutes or until set (do not over-bake). Cool 1 minute; remove from cookie sheet to wire rack.
